It's messy which I am not a fan of but sometimes I will work for food. We tried a version of banh xeo that was eaten with fresh rice paper wrapper and a bunch of herbs and lettuce. I loved the rice paper so much.
I know that it often comes with the smaller, crispier crepes. And I’m sure I could ask places here. But… it’s just more work lol. Extra texture but not flavour.
The ability to have different flavor and texture combinations is why I like the wrap it yourself aspect of this dish. I also like mine with minimal filling, you’ve pointed out the soggy coefficient correctly.
Yes, that is a great point. A wrap made with a mustard leaf is different than one with lettuce, or maybe this wrap is only with perilla, etc. I know it might be frowned upon, but perhaps having some wraps without a nuoc mam dip would allow me to taste and appreciate some of the milder flavours.

Oh ya it was kinda crispy. It's all personal preference then, texture is important to me
